Oh! So Garlic Potato Salad with Creamy Dijon Dressing

Oh! So Garlic Potato Salad

Serves 12

Ingredients:

  • 3 tbsp Oh! So Garlic Seasoning (or more to taste)
  • 2 tbsp water
  • 2 lbs small red potatoes, quartered
  • 1 lb sweet potatoes, peeled and cubed
  • 2 tbsp cider vinegar, divided
  • 1½ tsp salt, divided
  • 6 large eggs, hard cooked
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 tbsp Dijon mustard
  • ½ tsp paprika
  • ¼ tsp freshly ground black pepper
  • 1 medium sweet onion, finely chopped
  • 2 ribs celery, finely chopped
  • 2 tbsp fresh parsley, minced

Instructions:

  1. In a small cup, combine Oh! So Garlic Seasoning with 2 tablespoons water. Stir and set aside to bloom.
  2. Place red and sweet potatoes in a large Dutch oven with 1 tablespoon vinegar and 1 teaspoon salt. Add water to cover. Bring to a boil, then reduce heat and simmer for 10–12 minutes or until just tender. Drain and set aside.
  3. Chop five of the eggs. In a large bowl, whisk together mayonnaise, sour cream, mustard, paprika, black pepper, the bloomed seasoning mixture, and remaining salt and vinegar.
  4. Add cooked potatoes, chopped eggs, onion, and celery to the dressing. Gently fold until evenly combined. Refrigerate for at least 4 hours or until thoroughly chilled.
  5. Before serving, slice the remaining egg and use it to garnish the top of the salad. Sprinkle with fresh parsley and extra paprika if desired.
