Moist Carrot Honey Bread with Cinnamon and Sweet Spices

This tender Carrot Honey Bread is packed with warm spice and natural sweetness, thanks to fresh carrots, golden honey, and Lesley Elizabeth Sweet Spices. It’s a comforting loaf that’s perfect for breakfast, brunch, or an afternoon snack with tea or coffee.

Ingredients:

  • 1 ½ cups grated carrots
  • ½ cup honey
  • 2 eggs
  • ½ cup Extra Virgin Olive Oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon Lesley Elizabeth Sweet Spices

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, whisk together eggs, honey, oil, and vanilla until smooth.
  3. Stir in grated carrots.
  4. In a separate bowl, combine flour, baking powder, baking soda, salt, and Sweet Spices.
  5. Gradually add the dry ingredients to the wet, stirring just until combined.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Serving Tips:

  • Enjoy warm with a smear of butter or cream cheese.
  • Sprinkle powdered sugar on top for a pretty finish.
  • Wrap and refrigerate for up to 5 days or freeze for later.
