Ingredients:
- 1 ½ cups grated carrots
- ½ cup honey
- 2 eggs
- ½ cup Extra Virgin Olive Oil
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 tablespoon Lesley Elizabeth Sweet Spices
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a large mixing bowl, whisk together eggs, honey, oil, and vanilla until smooth.
- Stir in grated carrots.
- In a separate bowl, combine flour, baking powder, baking soda, salt, and Sweet Spices.
- Gradually add the dry ingredients to the wet, stirring just until combined.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
