Ingredients:
- 1 large eggplant, sliced into ½-inch rounds
- 1–2 tablespoons Extra Virgin Olive Oil
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ cup marinara sauce
- 1 cup shredded mozzarella cheese

Instructions:
