Maple Bacon Sugar Glaze for Holiday Ham

Maple Bacon Sugar Glaze for Ham

Makes enough to glaze one full ham

Ingredients:

  • ½ cup packed light brown sugar
  • ½ cup Maple Bacon Sugar
  • ½ cup clover honey
  • 3 tablespoons cider vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons yellow mustard
  • 1 teaspoon ground cinnamon
  • ½ teaspoon each of:
    • onion powder
    • garlic powder
    • ground sage
    • dried parsley
    • ground nutmeg
    • ground ginger
    • ground cloves
    • paprika
  • ¼ teaspoon each of:
    • black pepper
    • ancho chili powder

Instructions:

  1. In a medium saucepan, whisk together all glaze ingredients. Simmer over medium heat, stirring often, until the sugar fully dissolves and glaze thickens slightly.
  2. Brush ham generously with ⅓ of the glaze, making sure to get between the slices. Wrap tightly in foil and bake at 325°F until the internal temperature reaches 100–110°F (approximately 10–14 minutes per pound).
  3. Unwrap ham carefully. Spoon pan juices over the ham. Brush with another ⅓ of the glaze (reheat if it thickens).
  4. Increase oven temp to 400°F and bake uncovered until ham reaches 140°F, about 20–30 minutes, basting with pan juices every 10 minutes.
  5. Once out of the oven, spoon juices again and brush with remaining glaze. Cover loosely with foil, rest 15 minutes, baste again, and serve.
