Serves: 4
Cook Time: 30 minutes

Ingredients:

  • 4 salmon fillets (about 6 oz each)

  • 2 tbsp olive oil

  • 2 tbsp Lesley Elizabeth Lemony Dill Seasoning & Rub

  • 1 lemon (zested and juiced)

  • 1½ cups couscous

  • 2 cups chicken or vegetable broth

  • 2 tbsp butter

  • 2 tbsp chopped parsley

Instructions:

  1. Prepare the Salmon: Preheat oven to 400°F and line a baking sheet with parchment paper. Brush each fillet with olive oil, sprinkle evenly with Lemony Dill Seasoning, and drizzle with fresh lemon juice.

  2. Roast: Bake for 12–15 minutes, or until the salmon flakes easily with a fork.

  3. Make the Couscous: While the salmon cooks, bring broth to a boil in a saucepan. Stir in couscous, butter, and lemon zest. Cover and remove from heat; let stand 5 minutes, then fluff with a fork. Stir in parsley and a squeeze of lemon juice.

  4. Serve: Plate the salmon over a bed of couscous and garnish with extra herbs or lemon slices for a restaurant-worthy finish.
