Lemony Dill Crab Cakes with Tangy Sauce

Crab Cakes with Lemony Dill Seasoning

Makes about 8 crab cakes

Ingredients:

  • 1¼ cups mayonnaise
  • Juice of one lemon
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons hot sauce (adjust to taste)
  • 1½ pounds lump crabmeat, picked over for shells
  • 1¼ cups crushed saltine crackers (about 1 sleeve)
  • 4 scallions, finely minced
  • 2 tablespoons Lesley Elizabeth Lemony Dill Seasoning
  • 4 tablespoons olive oil (for pan-frying)

Instructions:

  1. In a large bowl, combine the mayonnaise, lemon juice, Worcestershire sauce, hot sauce, and Lemony Dill Seasoning. Set aside ½ cup of this sauce to serve on the side.
  2. Crush the saltines until mostly fine, leaving a few small pieces for texture. Gently fold the crabmeat, saltines, and scallions into the remaining sauce mixture until just combined.
  3. Form the crab mixture into eight 1-inch-thick patties.
  4. In a large nonstick skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering. Add half of the crab cakes and cook until golden brown—about 2½ to 3 minutes per side. Transfer to a platter and tent with foil to keep warm.
  5. Repeat with the remaining olive oil and crab cakes.
  6. Serve hot with the reserved Lemony Dill mayo sauce.
