Layered Pesto Torta with Goat Cheese & Pine Nuts – Bold & Elegant

Ingredients:

  • 8 ounces goat cheese
  • 8 ounces cream cheese, softened
  • ¾ cup Lesley Elizabeth Basil Garlic Pine Nut Pesto
  • ¼ cup pine nuts, toasted (optional for garnish)
  • Fresh basil leaves, for garnish
  • Crackers or baguette slices, for serving

Instructions:

  1. In a medium bowl, blend the goat cheese and cream cheese until smooth and creamy.
  2. Line a small bowl or ramekin with plastic wrap, allowing extra to hang over the sides.
  3. Spread ⅓ of the cheese mixture into the bottom of the lined bowl.
  4. Top with ⅓ of the Basil Garlic Pine Nut Pesto, spreading gently to cover.
  5. Repeat layers until all ingredients are used, finishing with a pesto layer on top.
  6. Fold plastic wrap over the top and refrigerate for at least 2 hours, or overnight.
  7. To serve, invert the torta onto a serving plate and carefully remove the plastic wrap.
  8. Garnish with toasted pine nuts and fresh basil if desired. Serve with your favorite crackers or bread.
