Italian Pizza Soup with Sausage & Traditional Italian Seasoning
Serves 12
Ingredients:
- 1 pound bulk Italian sausage
- 1 medium onion, chopped
- 1 medium green bell pepper, sliced into strips
- 1 medium sweet red bell pepper, sliced into strips
- 15 ounces cannellini beans, rinsed and drained
- 14½ ounces diced tomatoes, undrained
- 14 ounces pizza sauce
- 2 tablespoons Lesley Elizabeth Traditional Italian Seasoning
- 2 cans (14½ ounces each) beef broth
- 5 ounces Caesar salad croutons (for topping)
- Shredded mozzarella cheese (for topping)
Instructions:
- In a large nonstick skillet over medium-high heat, crumble the Italian sausage and cook until browned and no longer pink. Add onion and both peppers; cook until crisp-tender. Drain off excess fat if needed.
- Transfer the sausage and pepper mixture to a 6-quart slow cooker. Add cannellini beans, diced tomatoes, pizza sauce, Traditional Italian Seasoning, and beef broth. Stir to combine.
- Cover and cook on low heat for 6 to 8 hours, or until vegetables are tender and flavors are well blended.
