Grilled Mahi-Mahi with Dill Sauce and Salmon Rub

Grilled Mahi-Mahi with Dill Sauce Recipe

Using Lesley Elizabeth Salmon Grilling Rub

Serves 4

Ingredients:

  • 1 pound Mahi-Mahi filets
  • ⅓ cup mayonnaise
  • 2–3 tablespoons Salmon Grilling Rub
  • 2 cups sliced mushrooms
  • Fresh cracked black pepper, to taste
  • 1 fresh lemon, sliced
  • 2 green onions, chopped
  • Olive oil for brushing

Instructions:

  1. Preheat your gas grill to medium-high heat (about 450°F) and lightly oil the grates to prevent sticking.
  2. Brush both the mahi-mahi filets and sliced mushrooms with olive oil. Season everything generously with Lesley Elizabeth Salmon Grilling Rub.
  3. In a small bowl, mix together the mayonnaise and an additional 1 tablespoon of Salmon Grilling Rub until well combined. Spread this mixture evenly over the top of each fish filet.
  4. Place the fish and mushrooms on the hot grill. Grill mahi-mahi for 4 to 5 minutes per side, or until golden and flaky. Cook mushrooms alongside fish until tender.
  5. Finish with a drizzle of fresh lemon juice and sprinkle chopped green onions on top before serving.
