Green Apple & Celery Salad with Spinach Seasoning

GREEN APPLE & CELERY SALAD

Featuring Spinach Seasoning

Makes 8 servings

Ingredients:

  • 2 large Granny Smith apples, peeled, quartered, and cored
  • 1 large bunch celery with leaves
  • 1 package baby spinach salad leaves
  • ¾ cup pecans, toasted and chopped
  • 2 tablespoons Lesley Elizabeth Spinach Seasoning

Dressing:

  • ¼ cup fresh lemon juice
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Lesley Elizabeth Spinach Seasoning
  • ⅔ cup olive oil

Instructions:

  1. Make the dressing: In a medium bowl, whisk together lemon juice, Dijon mustard, and 1 tablespoon Spinach Seasoning. Slowly whisk in olive oil until emulsified. Set aside. Dressing can be refrigerated for several days.
  2. Prep the vegetables: Trim celery leaves and chop enough to make 1 cup. Slice celery stalks thinly on the diagonal and soak in a bowl of cold water to keep crisp.
  3. Slice apples: Thinly slice each quarter of the apple. Pat the drained celery dry with a paper towel.
  4. Assemble: In a large bowl, combine sliced apples, 2 tablespoons Spinach Seasoning, celery, toasted pecans, and prepared dressing. Toss gently to coat.
