Gnocchi with Shrimp & Artichoke
Basil, Garlic & Pine Nut Pesto
Serves 4
Ingredients:
- 2 quarts plus ½ cup water, divided
- 16 ounces gnocchi
- 2 jars (7½ oz each) marinated artichoke hearts, drained
- 1 lb large shrimp, peeled and deveined (coarsely chop ½ lb)
- 3 tablespoons shredded Parmesan cheese
- 1 tablespoon fresh lemon juice
- ⅓ cup olive oil
- 8 tablespoons (½ jar) Basil, Garlic & Pine Nut Pesto
Instructions:
- Prepare Basil, Garlic & Pine Nut Pesto according to package instructions and set aside.
- In a medium stock pot, bring 2 quarts of water to a boil. Add gnocchi and cook until they float to the surface, about 4 minutes. Remove with a slotted spoon and transfer to a large bowl.
- Add shrimp to the boiling water and cook for 5 minutes or until shrimp are pink and fully cooked. Drain and add shrimp along with drained artichoke hearts to the gnocchi.
- Stir in the prepared Basil, Garlic & Pine Nut Pesto. Add lemon juice, olive oil, and Parmesan cheese. Toss gently to combine and serve immediately.
