Glazed Doughnut Muffins with Blueberry Honey Sugar
Makes: 1½ dozen
Batter Ingredients:
- ¼ cup butter, softened
- ½ cup Avocado Oil
- ½ cup Blueberry Honey Sugar
- ⅓ cup brown sugar
- 2 large eggs
- 1½ teaspoons baking powder
- ¼ teaspoon baking soda
- ¾ teaspoon ground nutmeg
- 1 teaspoon cinnamon
- ¾ teaspoon salt
- 1 teaspoon vanilla extract
- 2⅔ cups all-purpose flour
- 1 cup milk
Glaze Ingredients:
- 3 tablespoons butter, melted
- 1 cup confectioners' sugar
- Remaining Blueberry Honey Sugar from the jar
- ¾ teaspoon vanilla extract
- 2 tablespoons hot water
Instructions:
- Preheat oven to 425˚F. Lightly grease a standard muffin tin or use paper liners sprayed with nonstick spray to ensure easy removal.
- In a medium bowl, cream together butter, Avocado Oil, Blueberry Honey Sugar, and brown sugar until smooth.
- Beat in the eggs.
- Add baking powder, baking soda, nutmeg, cinnamon, salt, and vanilla; stir to combine.
- Alternately mix in flour and milk, beginning and ending with flour, until batter is fully incorporated.
- Spoon batter into muffin cups, filling nearly to the top.
- Bake for 15–17 minutes, or until tops are pale golden and a toothpick inserted in the center comes out clean.
- While muffins bake, prepare glaze: whisk hot water with the remaining Blueberry Honey Sugar, then mix in melted butter, vanilla, and confectioners' sugar until smooth.
- Let muffins cool slightly. Dip muffin tops into glaze and allow to harden. For extra sweetness, double dip after the first glaze sets.
- Serve warm or cool completely on a wire rack. Store airtight at room temperature for up to 1 day.
