Glazed Chicken & Bell Pepper Sandwiches

Serves 6

Ingredients:

  • 4 teaspoons extra virgin olive oil (EVOO), divided
  • ½ teaspoon salt, separated
  • 1¼ pounds chicken breast tenders
  • ½ cup Lesley Elizabeth Pomegranate Balsamic Vinegar, divided
  • 2 cups red bell pepper strips
  • 2 cups sliced sweet onion
  • 2 loaves (8 ounces each) focaccia bread, halved horizontally
  • 4 ounces provolone cheese, thinly sliced
  • ⅛ teaspoon freshly ground black pepper

Instructions:

  1. Heat 2 teaspoons EVOO in a large skillet over medium-high heat. Sprinkle chicken tenders with ¼ teaspoon salt and add to the pan. Sear for 1 minute per side.
  2. Add ¼ cup Pomegranate Balsamic Vinegar and cook until chicken is fully cooked and the vinegar has reduced to a syrupy glaze. Remove chicken, cover to keep warm.
  3. In the same skillet, add remaining 2 teaspoons EVOO. Sauté the red bell peppers and sweet onions for about 7 minutes or until softened.
  4. Stir in remaining ¼ teaspoon salt and ¼ cup Pomegranate Balsamic Vinegar. Cook 1 more minute until glaze thickens and coats the vegetables.
  5. Layer glazed chicken evenly on bottom halves of focaccia. Top with the balsamic pepper-onion mixture and provolone cheese.
  6. Sprinkle with black pepper to taste, place remaining bread halves on top, slice, and serve warm.
