Tomato, Avocado & Feta Salad
Serves 4

Ingredients:
- 1 ripe avocado, sliced
- 1 English cucumber, sliced
- ⅓ cup chopped red or sweet onion
- 1 pint cherry tomatoes, halved
- ¼ cup crumbled feta cheese (or to taste)
- 1 tsp Traditional Italian Seasoning
- ⅔ cup Lesley Elizabeth Sunflower Oil
- ⅓ cup red wine vinegar
- ½ tsp Wicked Good Salt
- ¼ tsp Pepper & Garlic Seasoned Sea Salt
Instructions:
- In a small jar or bottle, combine red wine vinegar, Sunflower Oil, Traditional Italian Seasoning, Wicked Good Salt, and Pepper & Garlic Seasoned Sea Salt. Shake well and let sit for 10 minutes to allow flavors to develop.
- In a medium bowl, toss together cucumber, onion, and cherry tomatoes until well combined.
- Gently mix in crumbled feta cheese.
- Divide salad among four plates. Top each with sliced avocado and drizzle with your desired amount of dressing.
