Flavorful Rotini Pasta with Catalan Sauce & Sweet Bell Pepper

Rotini with Catalan Sauce Featuring Sweet Bell Pepper Seasoning

Ingredients:

  • 1 pound rotini pasta
  • 3 one-inch slices baguette or 2 slices Italian bread, toasted
  • 8 tablespoons Sweet Bell Pepper Seasoning
  • ¼ cup salted almonds
  • 1½ cups chicken broth
  • ¼ teaspoon red pepper flakes
  • ¼ cup extra virgin olive oil
  • 1 teaspoon sherry vinegar
  • 10 ounces frozen baby peas
  • ⅓ cup finely grated Parmesan cheese
  • Salt to taste

Instructions:

  1. Cook rotini pasta according to package directions until just al dente.
  2. While pasta cooks, tear toasted bread into pieces and place in a blender. Add Sweet Bell Pepper Seasoning, chicken broth, almonds, red pepper flakes, extra virgin olive oil, and sherry vinegar. Blend until smooth, about 2 minutes.
  3. Transfer blended sauce to a large skillet and bring to a simmer over medium heat.
  4. When pasta is nearly al dente, add the frozen peas and cook for another 2 minutes until tender.
  5. Drain pasta and peas, then toss immediately in the warm pepper sauce along with Parmesan cheese. Mix until everything is well coated.
  6. Divide into four warmed bowls. Add salt to taste and top with more grated Parmesan if desired. Serve immediately.
