Flavor-Packed Jambalaya with Traditional Italian Seasoning

This bold and savory jambalaya recipe features the perfect fusion of Southern spice and Italian herb flavor. Using Lesley Elizabeth’s Traditional Italian Seasoning, this hearty dish comes alive with aromatic vegetables, juicy chicken, and tender shrimp — all simmered in a flavorful tomato base and served with rice. Jambalaya with Traditional Italian Seasoning

Ingredients:

  • 2 teaspoons extra virgin olive oil
  • 1 cup onion, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup celery, chopped
  • 29 ounces stewed tomatoes
  • 1 pound boneless, skinless chicken breast, cut into bite-size pieces
  • 1 pound raw shrimp, peeled and deveined
  • ¼ teaspoon cayenne pepper (adjust to taste)
  • 1½ tablespoons Traditional Italian Seasoning
  • 4 cups cooked brown rice
  • Salt & freshly ground black pepper to taste

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Add onion, green pepper, and celery. Sauté for about 5 minutes until vegetables are tender-crisp.
  2. Add chicken and cook until it is no longer pink, approximately 5 minutes.
  3. Stir in stewed tomatoes, shrimp, cayenne, and Traditional Italian Seasoning. Bring to a boil, then reduce heat and simmer for about 5 minutes until shrimp are cooked through.
  4. Stir in the cooked brown rice. Continue cooking until most of the liquid is absorbed and the rice is heated through.

Slow Cooker Jambalaya Variation:

  1. Place chicken, onion, green pepper, celery, and tomatoes in a slow cooker. Mix well.
  2. Cook on HIGH for 3½ hours or on LOW for 7½ hours.
  3. Stir in raw shrimp and rice. Cover and cook for an additional 30 minutes on HIGH until shrimp are pink and rice is tender.
