Ingredients:

  • 2 medium eggplants (about ½ pound each)
  • ½ cup Garlic & Rosemary Oil
  • 1 cup panko breadcrumbs
  • 2 ounces crumbled goat cheese

Instructions:

  1. Remove the stem and blossom end from the eggplants. Slice into ½ inch thick rounds.
  2. Pour Garlic & Rosemary Oil into a shallow dish and place panko breadcrumbs in a separate shallow dish.
  3. Dip each eggplant slice first into the oil, then coat evenly with breadcrumbs.
  4. Arrange the coated eggplant slices in a single layer on a large baking sheet.
  5. Bake at 350°F for 25 minutes until crispy and golden.
  6. Remove from oven and sprinkle crumbled goat cheese over each slice while warm.

Note: For extra flavor, drizzle or serve with warmed marinara sauce.
