Enjoy a fresh and healthy twist on classic pizza with these flavorful Eggplant Pizzas, featuring our signature Garlic, Basil & Balsamic Oil. Perfect as a low-carb appetizer or a light dinner, this recipe combines tender roasted eggplant slices topped with a savory tomato-basil sauce and melted Italian cheese blend.

Ingredients:

  • 1 eggplant (about 16 ounces, 9–10 inches long)
  • 1 tablespoon salt (for drawing moisture from eggplant)
  • ¼ cup Garlic, Basil & Balsamic Oil
  • 10 large basil leaves, cut into thin strips
  • ⅔ to 1 cup Italian blend shredded cheese

Sauce Ingredients:

  • 1 tablespoon Garlic, Basil & Balsamic Oil
  • 3 cups petite diced tomatoes
  • 2 large basil leaves, chopped

Instructions:

  1. Cut off both ends of the eggplant and slice into ¾-inch thick rounds. Lay the slices on double layers of paper towels and sprinkle both sides generously with salt. Let sit for 30 minutes to draw out moisture.
  2. Meanwhile, prepare the sauce by combining sauce ingredients in a saucepan. Simmer, breaking up tomatoes with a fork, until thickened.
  3. After 30 minutes, pat eggplant slices dry to remove excess salt and moisture.
  4. Preheat oven to 375°F. Lightly oil a baking sheet or dish with Garlic, Basil & Balsamic Oil. Place eggplant slices in a single layer.
  5. Shake the oil bottle to mix herbs and spices, then brush about ¼ cup over the eggplant slices, ensuring even coverage.
  6. Roast eggplant for about 25 minutes, taking care not to overcook — they should hold their shape and remain slightly firm.
  7. Turn oven to broil. Spread a few tablespoons of tomato sauce over each eggplant slice. Top with basil strips and a generous sprinkle of shredded Italian cheese.
  8. Broil until cheese melts and turns lightly browned, about 2-3 minutes. Serve hot and enjoy!
