Vegetable Frittata with Rosemary & Garlic Seasoning
Serves: 6
Ingredients:
- 3 large eggs, plus 3 egg whites
- ¾ cup cottage cheese
- 4 oz smoked Gouda cheese, shredded (about 1 cup)
- 2 tbsp Rosemary & Garlic Seasoning, divided
- 2 tbsp Extra Virgin Olive Oil (EVOO)
- 1 medium onion, chopped
- Kosher salt, to taste
- 16 oz frozen mixed vegetables (broccoli, cauliflower, carrots), thawed
- 2 tbsp grated Parmesan cheese
- 1 scant tsp paprika
Instructions:
- Preheat oven to 450°F and position a rack in the upper third of your oven.
- In a large bowl, whisk the eggs and egg whites. Add cottage cheese and whisk until nearly smooth. Stir in Gouda cheese and 1 tablespoon of Rosemary & Garlic Seasoning. Set aside.
- Heat a 10-inch oven-safe non-stick skillet over medium-high. Add EVOO, chopped onion, salt, and remaining 1 tablespoon Rosemary & Garlic Seasoning. Sauté for about 2 minutes.
- Add thawed mixed vegetables and cook until just tender, about 5 minutes.
- Reduce heat to medium. Pour in the egg mixture and spread evenly. Let cook undisturbed for 2–3 minutes until a crust forms. Run a spatula around the edge to loosen the sides and continue cooking for another 2–3 minutes until the bottom is golden.
- Sprinkle the top with Parmesan cheese and paprika. Transfer skillet to the oven and bake for 5–7 minutes until eggs are just set.
- Remove from oven, cover, and let rest for 5–7 minutes. Cut into wedges and serve warm.
