Easy Vegetable Frittata with Rosemary Garlic Flavor

Vegetable Frittata with Rosemary & Garlic Seasoning

Serves: 6

Ingredients:

  • 3 large eggs, plus 3 egg whites
  • ¾ cup cottage cheese
  • 4 oz smoked Gouda cheese, shredded (about 1 cup)
  • 2 tbsp Rosemary & Garlic Seasoning, divided
  • 2 tbsp Extra Virgin Olive Oil (EVOO)
  • 1 medium onion, chopped
  • Kosher salt, to taste
  • 16 oz frozen mixed vegetables (broccoli, cauliflower, carrots), thawed
  • 2 tbsp grated Parmesan cheese
  • 1 scant tsp paprika

Instructions:

  1. Preheat oven to 450°F and position a rack in the upper third of your oven.
  2. In a large bowl, whisk the eggs and egg whites. Add cottage cheese and whisk until nearly smooth. Stir in Gouda cheese and 1 tablespoon of Rosemary & Garlic Seasoning. Set aside.
  3. Heat a 10-inch oven-safe non-stick skillet over medium-high. Add EVOO, chopped onion, salt, and remaining 1 tablespoon Rosemary & Garlic Seasoning. Sauté for about 2 minutes.
  4. Add thawed mixed vegetables and cook until just tender, about 5 minutes.
  5. Reduce heat to medium. Pour in the egg mixture and spread evenly. Let cook undisturbed for 2–3 minutes until a crust forms. Run a spatula around the edge to loosen the sides and continue cooking for another 2–3 minutes until the bottom is golden.
  6. Sprinkle the top with Parmesan cheese and paprika. Transfer skillet to the oven and bake for 5–7 minutes until eggs are just set.
  7. Remove from oven, cover, and let rest for 5–7 minutes. Cut into wedges and serve warm.
