Ingredients:
- 1 pre-made deep dish pie crust
- 1 tablespoon Extra Virgin Olive Oil
- 1 small onion, finely chopped
- 2 teaspoons Sweet Bell Pepper Seasoning
- 1 package (10 oz) frozen chopped spinach, thawed and drained
- ¾ cup ricotta cheese
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 large eggs
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté chopped onion with Sweet Bell Pepper Seasoning until softened.
- In a bowl, combine cooked onion, spinach, ricotta, mozzarella, Parmesan, and eggs. Mix well and season with salt and pepper.
- Spoon the filling into the pie crust, smoothing the top evenly.
- Bake for 35–40 minutes, or until the center is set and the crust is golden brown.
- Allow to cool slightly before slicing and serving.
