Crunchy Turkey Salad with Fig Balsamic Oil

Serves 4

Ingredients:

  • ⅓ cup Fig Balsamic Oil
  • 1 tablespoon poppy seeds
  • ¼ teaspoon freshly ground black pepper
  • 1 large head Bibb lettuce (about 8 cups when chopped)
  • 2 cups cooked turkey, diced
  • 3 scallions, sliced
  • 1 cup sliced almonds
  • 1 cup chow mein noodles

Instructions:

  1. In a small bowl, whisk together Fig Balsamic Oil, poppy seeds, and black pepper. Set aside.
  2. Clean and chop Bibb lettuce into bite-sized pieces.
  3. In a large bowl, combine lettuce, diced turkey, sliced scallions, sliced almonds, and chow mein noodles.
  4. Drizzle with dressing just before serving and toss gently to coat.
