Sweet Potato Mushroom Risotto with Oh! So Garlic!
This savory risotto combines the best of fall and comfort food with roasted sweet potatoes, creamy mascarpone, and deep garlic flavor from Oh! So Garlic! Seasoning. It’s a must-try for anyone who loves elevated yet easy-to-make meals!
Ingredients:
- 1 pound sweet potatoes, roasted and peeled
- 2 tablespoons extra virgin olive oil
- 3 cups thinly sliced shiitake or portabella mushrooms
- 1 cup finely chopped yellow onion
- 4 tablespoons Lesley Elizabeth Oh! So Garlic! Seasoning
- 1 ½ cups Arborio rice
- 5 cups chicken stock, divided
- 1 teaspoon salt, divided
- ¾ teaspoon freshly ground black pepper
- ¼ cup mascarpone cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- ½ teaspoon fresh-squeezed lemon juice
Instructions:
1. Prep the Sweet Potatoes:
In a food processor, blend roasted sweet potatoes until nearly smooth. Set aside 1 cup for early cooking and reserve the rest for later.
2. Sauté the Base:
Heat the extra virgin olive oil in a Dutch oven over medium-high heat. Add mushrooms, onions, and Oh! So Garlic! seasoning; sauté for 5 minutes until fragrant and softened.
3. Toast the Rice:
Stir in Arborio rice and cook for 1 minute, stirring constantly. Add 1 cup of sweet potatoes, 2 cups of chicken stock, and ½ teaspoon salt. Bring to a boil, then simmer for 8 minutes, stirring frequently, until reduced by half.
4. Finish Cooking:
Add remaining 3 cups of stock and the rest of the salt. Cook for 25 minutes or until rice is tender, stirring occasionally. Remove from heat and stir in the remaining sweet potatoes, black pepper, mascarpone, and lemon juice.
5. Serve:
Divide risotto evenly into six shallow bowls. Top with chopped parsley and Parmesan cheese. Serve immediately for a creamy, garlic-forward comfort dish.
