This creamy wild rice casserole features sautéed mushrooms, carrots, celery, and aromatic green onions, paired with hearty chicken and earthy wild rice. Ingredients:
- 3 cups cooked wild rice (prepare according to package instructions)
- 1 tablespoon extra virgin olive oil
- ½ pound boneless, skinless chicken breasts
- 2 teaspoons salt, divided
- 1 teaspoon freshly ground black pepper, divided
- Cooking spray
- ¼ cup all-purpose flour
- 2 (12 oz) cans evaporated milk
- ½ cup Lesley Elizabeth Leek & Garlic Seasoning
- 1 cup chopped carrots
- ½ cup chopped celery
- 16 ounces pre-sliced mushrooms
- ¼ cup chopped fresh parsley
- 3 green onions, sliced
- ½ cup sliced almonds
Instructions:
1. Prep the Chicken:
Preheat oven to 350⁰F. Heat olive oil in a large skillet over medium-high heat. Sprinkle chicken with 1 teaspoon salt and ½ teaspoon pepper. Sear for 3 minutes on each side. Transfer chicken to a greased 9×13 baking dish and bake for 10 minutes or until fully cooked. Cool and chop.
2. Sauté the Vegetables:
