Creamy Chicken Casserole with Leek & Garlic Seasoning

Ingredients:
- 3 cups cooked wild rice (prepared per package instructions)
- 1 tablespoon extra virgin olive oil
- ½ pound boneless, skinless chicken breasts
- 2 teaspoons salt, divided
- 1 teaspoon freshly ground black pepper, divided
- Cooking spray
- ¼ cup all-purpose flour
- 2 (12-ounce) cans evaporated milk
- ½ cup Lesley Elizabeth Leek & Garlic Seasoning
- 1 cup chopped carrots
- ½ cup chopped celery
- 16 ounces pre-sliced mushrooms
- ¼ cup chopped fresh parsley
- 3 green onions, sliced
- ½ cup sliced almonds
Instructions:
1. Cook the Chicken:
Preheat oven to 350°F. Heat extra virgin olive oil in a large skillet over medium-high heat. Season chicken with 1 teaspoon salt and ½ teaspoon pepper. Sear chicken for 3 minutes per side, then transfer to a greased 9x13-inch baking dish. Bake for 10 minutes or until cooked through. Cool and chop into bite-sized pieces.
2. Prepare the Veggie Mixture:
In the same skillet, whisk together ¼ cup flour and ½ cup evaporated milk until smooth. Add Leek & Garlic Seasoning, carrots, celery, mushrooms, and parsley. Cook for 13 minutes until vegetables are tender.
3. Make the Sauce:
Add remaining evaporated milk to skillet and bring to a slow simmer. Stir in flour-milk mixture and cook until slightly thickened.
