Creamy Chicken & Sausage Pasta with Mediterranean Herb Oil

This rich, savory dish blends juicy chicken, smoky sausage, sweet bell peppers, and melty cheese into a creamy pasta that's bursting with flavor. The herb-infused oil and signature Wicked Good Pepper take it over the top.

Ingredients:

  • 4 cloves fresh garlic, sliced
  • ¼ cup Lesley Elizabeth Mediterranean Herb Oil
  • 1 medium yellow bell pepper, cut into strips
  • 1 medium red bell pepper, cut into strips
  • ¾ cup corn (fresh or canned)
  • 1 cup sweet onion, sliced
  • 8 ounces shredded mozzarella or Parmesan cheese
  • 1 pound chicken breast, cut into bite-sized pieces
  • 8 ounces Andouille or Chorizo sausage, sliced
  • 12 ounces penne pasta
  • 1 tablespoon Wicked Good Pepper
  • ½ teaspoon salt (or to taste)
  • 1 pint half & half cream

Instructions:

1. Cook the Pasta:

Boil the penne pasta according to package directions. Drain and set aside.

2. Sauté the Meat:

In a large skillet, heat Mediterranean Herb Oil over medium heat. Sauté garlic, chicken, and sausage until chicken is no longer pink.

3. Add Veggies & Seasoning:

Stir in the onions and bell peppers. Cook until tender-crisp. Add half & half cream, Wicked Good Pepper, and salt. Let it simmer gently.

4. Finish the Sauce:

Once the cream starts to bubble, stir in corn and cheese. Mix until cheese is fully melted and sauce is creamy and smooth.

5. Combine & Serve:
