  • 1 cup plus 2 tablespoons milk, divided
  • 1½ tablespoons Adobo Seasoning, or to taste
  • 1½ pounds boneless skinless chicken breasts, cut into bite-size pieces
  • 15 ounces black beans, rinsed and drained
  • 11 ounces corn with red and green bell peppers, drained
  • 15 ounces diced fire-roasted tomatoes, drained (for crockpot, keep liquid)
  • ¼ cup fresh cilantro, chopped
  • 2 cups chicken broth (for crockpot version only)

Stovetop Instructions:

  1. Preheat oven to 400°F. Toss tortilla strips with oil and spread on a baking sheet. Bake for 10–12 minutes, stirring occasionally, until crisp.

  3. In a medium saucepan coated with cooking spray, cook chicken over medium-high heat for 8–10 minutes or until fully cooked.
  4. Add the cream cheese mixture, remaining milk, beans, corn, and tomatoes. Simmer over medium-low heat for 6–8 minutes, stirring often, until heated through.
  5. Serve topped with crispy tortilla strips and chopped cilantro.

Crockpot Instructions:

  1. Place whole chicken breasts in the crockpot and sprinkle with Adobo Seasoning.
  2. Top with black beans, corn, chicken broth, and tomatoes (with juice).
  3. Cook on LOW for 6–8 hours or HIGH for 4 hours until chicken is tender.
  4. Remove lid and shred chicken with two forks.
  5. Stir in cream cheese and milk until well combined and creamy.
  6. Serve topped with tortilla strips and cilantro.
