Spaghetti Pie with Portabella Mushrooms & Spinach Seasoning

This cheesy spaghetti pie recipe is loaded with umami from meaty portabella mushrooms, seasoned to perfection with Spinach Seasoning, and held together with a decadent blend of ricotta, Fontina, and Parmesan. Serve it warm or room temperature—perfect for make-ahead meals or potlucks!

Ingredients:

  • Unsalted butter, softened (for brushing)
  • 1 pound spaghetti
  • 3 tablespoons extra virgin olive oil
  • 1 medium onion, minced
  • 2 garlic cloves, minced
  • 1 pound portabella mushrooms, cut into 1-inch pieces
  • Kosher salt and freshly ground black pepper
  • 1 cup Lesley Elizabeth Spinach Seasoning
  • 3 large eggs
  • 1 ¾ cups whole milk
  • 3 cups shredded Fontina cheese (about 10 ounces)
  • 1 cup ricotta cheese
  • 1 cup finely grated Parmesan cheese

Instructions:

1. Prep the Pan & Pasta:

Preheat oven to 425°F. Wrap the outside of a 9-inch springform pan in foil and brush the inside with butter. In a large pot of salted boiling water, cook spaghetti until barely al dente; drain well.

2. Cook the Veggies:

In a skillet, heat the EVOO. Add onion and garlic, cooking over medium-high heat for about 1 minute until sizzling. Stir in mushrooms, season with salt and pepper, and cook until browned.

3. Mix the Filling:

In a large bowl, beat the eggs with milk. Stir in Spinach Seasoning, salt, and pepper. Add the ricotta and mix until smooth, then stir in the Fontina and Parmesan cheeses. Fold in the cooked mushrooms, onion, garlic, and drained spaghetti until everything is well combined.

4. Bake the Pie:

Pour the spaghetti mixture into the prepared springform pan, placed on a baking sheet. Bake for 35 minutes or until golden and bubbling. Let stand for 15 minutes before removing the ring. Slice into wedges and serve.
