Caramel Filled Maple Cookies with Maple Bacon Sugar

Ingredients:
- 1 cup butter, softened
- 8 ounces cream cheese, softened
- 1 cup Maple Bacon Sugar, divided
- 2½ cups all-purpose flour
- 24 soft caramels
- 3 teaspoons half-and-half
- 1 cup chopped pecans (optional)
Instructions:
- In a large mixing bowl, beat softened butter and cream cheese until smooth. Add ½ cup of Maple Bacon Sugar and mix until fully combined. Gradually beat in the flour until a soft dough forms.
- In a microwave-safe bowl, combine caramels and half-and-half. Microwave for 1½ minutes, stirring halfway, until the caramels are fully melted and the mixture is smooth. Let cool for 5 minutes.
- Meanwhile, shape dough into 48 (1-inch) balls. Roll each in the remaining Maple Bacon Sugar and chopped pecans, if using. Arrange 2 inches apart on parchment-lined baking sheets and press an indentation into the center of each ball.
- Transfer the slightly cooled caramel mixture into a resealable plastic bag. Snip a small piece off one corner and gently squeeze caramel into each cookie indentation.
- Bake at 350°F for 12–14 minutes, or until cookie edges are lightly golden. Cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
