Cajun-Style Hash with Cajun Seasoning
Serves: 4
Ingredients:
- 3 tablespoons Extra Virgin Olive Oil (EVOO), divided
- 6 ounces andouille sausage, chopped
- 1½ cups red-skinned potatoes, diced
- 2 tablespoons Cajun Seasoning, divided
- 1 green bell pepper, seeded and chopped
- 1 small onion, chopped
- 6 ounces sliced mushrooms
- Salt, to taste
- Optional: 8 large eggs (scrambled or fried to your liking)
Instructions:
- Preheat a 12-inch or larger heavy-bottomed skillet (cast iron preferred) over medium-high heat. Add enough EVOO to coat the pan. Sauté chopped andouille sausage for 4–5 minutes until lightly browned. Remove to a plate and set aside.
- Lower the heat to medium. Add more EVOO to coat the skillet. Toss in the diced potatoes and season with 1 tablespoon Cajun Seasoning. Sauté for about 10 minutes, stirring occasionally until potatoes are browned and fork-tender. Add EVOO if they begin to stick or burn.
- Add more EVOO and stir in the chopped bell pepper, onion, and mushrooms. Sprinkle with the remaining tablespoon of Cajun Seasoning. Sauté for 20–25 minutes, stirring occasionally, until vegetables are tender and golden. Adjust seasoning and salt to taste.
- Return the cooked sausage to the skillet and stir until everything is heated through and well combined.
- Optional: In a separate pan, cook eggs however you like—scrambled, sunny-side up, or over easy. Serve the hash topped with eggs for a protein-packed Southern-style breakfast.
