Cajun Tilapia with Chipotle Sauce

Herbed Salmon with Jalapeño Cilantro Oil

Serves 4

Ingredients:

  • 1 red onion, thinly sliced
  • 3 tablespoons Jalapeño & Cilantro Oil
  • 1 tablespoon butter
  • 4 salmon steaks
  • ½ cup loosely packed chopped cilantro
  • ¼ cup chopped chives
  • Fresh ground black pepper, to taste

Instructions:

  1. Heat 2 tablespoons of Jalapeño Cilantro Oil in a skillet over medium heat. Add sliced red onions and sauté for 2 minutes until just softened.
  2. Add the remaining tablespoon of oil and the butter to the pan.
  3. Place the salmon steaks into the pan and sauté over medium heat, turning once, until golden on both sides and cooked to your desired doneness (typically 3–4 minutes per side).
  4. Transfer salmon steaks to plates. Top with fresh chopped cilantro, chives, and a generous grind of black pepper.
