Artichoke & Lemon Pasta with Oh! So Garlic! Seasoning
Ingredients:
- 2½ teaspoons salt, divided
- ½ pound fresh asparagus, trimmed and cut into 1½-inch pieces
- 4 cups uncooked bow tie pasta
- 3 tablespoons extra virgin olive oil
- 14 ounces water-packed quartered artichoke hearts, well drained
- 3 tablespoons Oh! So Garlic! Seasoning
- 5 tablespoons water
- 1 cup crumbled goat cheese
- 1 tablespoon grated lemon peel
- 3 tablespoons lemon juice
- ⅓ cup grated Parmesan cheese
Instructions:
- In a small bowl, combine Oh! So Garlic! Seasoning with 5 tablespoons of water and set aside to rehydrate.
- Bring a large stockpot (about 6 quarts) of water to a boil with 2 teaspoons salt. Add asparagus and cook for 1–2 minutes, just until tender-crisp. Immediately transfer to an ice water bath, then drain and pat dry.
- Using the same boiling water, cook bow tie pasta according to package directions until al dente. Drain and reserve 1 cup of pasta water.
- In a large skillet over medium-high heat, warm 1 tablespoon olive oil. Add the drained artichoke hearts and sauté 3–4 minutes until lightly golden. Stir in rehydrated Oh! So Garlic! Seasoning and cook for 1 more minute.
- Add the cooked pasta to the skillet. Stir in asparagus, goat cheese, lemon peel, lemon juice, remaining salt, and remaining olive oil. Toss gently to coat, adding reserved pasta water a little at a time until a silky sauce forms.
