Breaded Eggplant with Traditional Italian Seasoning

Ingredients:
- 1 large eggplant, sliced ¼ inch thick
- 1 tablespoon kosher salt
- 2 eggs, lightly beaten with a splash of milk
- 2 cups Italian breadcrumbs
- 2 cups flour
- ¼ cup shredded Parmesan cheese
- 2 teaspoons Traditional Italian Seasoning
- 1 ½ cups Extra Virgin Olive Oil (EVOO)
Instructions:
- Preheat oven to 375°F.
- Place eggplant slices on paper towels, sprinkle with kosher salt, and let sit for 15 minutes to draw out moisture. Rinse with cold water, then pat dry on a double layer of paper towels.
- In a shallow bowl, combine breadcrumbs, shredded Parmesan cheese, and Traditional Italian Seasoning. Place flour in a second bowl and the egg and milk mixture in a third.
- Heat EVOO in a large deep skillet over medium-high heat. Test oil by dropping in a pinch of breadcrumbs—bubbling indicates readiness.
- Coat each eggplant slice in flour, dip in the egg mixture, then dredge in the breadcrumb mixture.
- Fry eggplant slices in hot oil, a few at a time, without overcrowding, until golden brown, about 2 minutes per side.
- Transfer fried slices to a baking sheet, cover with foil, and bake for 20 minutes. Remove foil and bake an additional 15 minutes for extra crispiness.
