Braised Beef Rolls with Herb It Up
Makes: 4 servings
Ingredients:
- 1 pound flank or flat iron steak (cut into four ⅓-inch thick slices)
- Salt & freshly ground pepper
- 4 slices of bacon or prosciutto
- 1 thick slice provolone cheese, cut into four equal pieces
- 2 tablespoons pine nuts
- 2 tablespoons raisins
- 1 clove garlic, minced
- ¼ cup Herb It Up Oil
- 1 yellow onion, chopped
- 1 cup dry red wine
- 1 cup beef stock
- 1 (15-ounce) can petite diced tomatoes with juice
- 1 tablespoon chopped fresh parsley
- 4 fresh basil leaves, torn
Instructions:
- Between two sheets of plastic wrap, gently pound each steak slice to ¼-inch thickness using a meat pounder.
- Season each slice with salt and pepper. Top with a slice of bacon or prosciutto and a piece of provolone cheese.
- Evenly sprinkle with pine nuts, raisins, and minced garlic. Roll each slice tightly, tucking in the ends, and tie with kitchen string at 1-inch intervals.
- Shake the Herb It Up Oil bottle vigorously, then heat ¼ cup of it in a large frying pan over medium heat.
- Brown beef rolls on all sides (about 15 minutes). Add chopped onion and sauté for 5 minutes.
- Deglaze the pan with red wine, scraping up browned bits. Stir in beef stock and diced tomatoes with juice.
- Season with salt and pepper. Cover and simmer on low heat for 1½ to 2 hours, turning rolls occasionally. Add water if the sauce becomes dry.
- Uncover and sprinkle parsley and basil over the rolls. Cook for 2 minutes more.
- Remove strings, slice each roll into thick pieces, and serve hot with the pan sauce spooned over.
