This hearty beef recipe is perfect for anyone who loves deep, savory flavors and melt-in-your-mouth texture. Using Lesley Elizabeth’s Smokey-Sweet Barbeque Seasoning, a splash of red wine, and Extra Virgin Olive Oil, this dish transforms humble chuck roast into a rich, flavorful entrée. Whether you're planning a family Sunday supper or a dinner party, this recipe will impress every time.

Ingredients (Serves 5–6):

  • 4 slices bacon, chopped
  • 2 ½ pounds beef chuck roast, cut into 1½-inch cubes
  • 3 tablespoons all-purpose flour
  • 1 tablespoon Extra Virgin Olive Oil
  • 4 tablespoons Smokey-Sweet Barbeque Seasoning
  • 1½ cups low-sodium chicken broth
  • ½ cup dry red wine
  • ¼ cup fresh parsley, chopped

Instructions:

1. Crisp the Bacon

Preheat oven to 325°F. In a large heavy pot, cook chopped bacon over medium heat until crisp and golden. Remove the bacon with a slotted spoon and set aside. Leave the rendered fat in the pot for flavor.

2. Coat and Brown the Beef

In a resealable plastic bag, combine flour and Smokey-Sweet Barbeque Seasoning. Add beef cubes and shake until evenly coated. In the same pot or a large skillet, cook beef in batches over medium-high heat, browning each piece for about 4 minutes. Don’t overcrowd the pan.

3. Braise to Tender Perfection

Once all beef is browned, return it to the pot. Add Extra Virgin Olive Oil, chicken broth, and dry red wine. Bring to a gentle simmer, then remove from heat. Cover and transfer to the oven. Braise for 1 hour, then remove the lid and continue to cook uncovered for about 45 minutes, or until the sauce thickens and meat is tender. If needed, re-cover and cook for an additional 15–30 minutes.

4. Serve and Garnish

Transfer the braised beef to a serving bowl. Stir in the crisped bacon and top with fresh chopped parsley for a burst of color and flavor. Serve hot with mashed potatoes, buttered noodles, or crusty bread.
