Beef Wrapped Asparagus with Chili Chipotle Oil

Ingredients (Makes 12 servings):

  • 2 teaspoons lime juice
  • 2 teaspoons Oh! so Garlic! Seasoning
  • ½ cup Chili Chipotle Oil
  • ⅛ teaspoon salt
  • ⅛ teaspoon fresh ground black pepper
  • 12 fresh asparagus, blanched in salted water
  • 1 strip loin steak (about 1 pound), semi-frozen
  • ½ cup fresh Parmesan cheese, shaved

Instructions:

1. Make the Marinade

In a small bowl, combine the lime juice, Oh! so Garlic! Seasoning, and Chili Chipotle Oil. Stir well. Pour into a marinating dish or large resealable plastic bag.

2. Prep the Beef

Season the semi-frozen steak with salt and pepper. Using a sharp knife, slice the steak into 12 long, thin strips. Wrap each strip around one asparagus spear and place into the marinade. Refrigerate for at least one hour or overnight for maximum flavor.

3. Cook and Serve

Heat a large sauté pan over medium-high heat. Add the beef-wrapped asparagus and cook, turning occasionally, until the beef is evenly browned. Transfer to a serving plate and top with shaved Parmesan curls (use a vegetable peeler for perfect curls).
