Beef Fajita Salad with Fiesta Dressing & Fajita Seasoning

Beef Fajita Salad with Fajita Seasoning

Serves 2

Featuring: Lesley Elizabeth Fajita Seasoning

Ingredients:

  • 8 oz beef steak, cut into thin strips
  • 2 tsp Fajita Seasoning
  • 1 tbsp vegetable oil
  • ½ cup sliced red or green bell peppers
  • ⅓ cup sliced onion
  • 11 oz chopped lettuce
  • 1 medium tomato, diced
  • ¼ cup drained canned black beans
  • ¼ cup sliced black olives
  • ¼ cup shredded Cheddar cheese

Instructions:

  1. Sprinkle beef strips with Fajita Seasoning. In a large nonstick skillet, sauté beef in vegetable oil over medium-high heat for 3 to 4 minutes.
  2. Add sliced peppers and onion to the skillet and sauté an additional 2 to 3 minutes, or until vegetables are tender-crisp.
  3. Divide lettuce onto two plates. Top each with the warm beef and vegetable mixture.
  4. Add diced tomatoes, black beans, olives, and shredded Cheddar cheese over each salad.
  5. Drizzle with Fiesta Dressing (recipe below) and serve immediately. Refrigerate any leftovers.

Fiesta Dressing Recipe:

  • ½ cup plain yogurt
  • ¼ cup sour cream
  • 2 tbsp ketchup
  • 2 tbsp minced onion
  • 1 tbsp lime juice
  • 1 tbsp finely chopped cilantro
  • 1 tbsp Fajita Seasoning

Instructions: Whisk all dressing ingredients together until well combined. Chill before serving. Store leftovers in the refrigerator.
