Beef Fajita Salad with Fajita Seasoning

Ingredients:
- 8 oz beef steak, cut into thin strips
- 2 tsp Fajita Seasoning
- 1 tbsp vegetable oil
- ½ cup sliced red or green bell peppers
- ⅓ cup sliced onion
- 11 oz chopped lettuce
- 1 medium tomato, diced
- ¼ cup drained canned black beans
- ¼ cup sliced black olives
- ¼ cup shredded Cheddar cheese
Instructions:
- Sprinkle beef strips with Fajita Seasoning. In a large nonstick skillet, sauté beef in vegetable oil over medium-high heat for 3 to 4 minutes.
- Add sliced peppers and onion to the skillet and sauté an additional 2 to 3 minutes, or until vegetables are tender-crisp.
- Divide lettuce onto two plates. Top each with the warm beef and vegetable mixture.
- Add diced tomatoes, black beans, olives, and shredded Cheddar cheese over each salad.
