Basil & Lemon Chicken with Tuscan Oil

Ingredients:
- 1 pound chicken tenders
- ¾ ounce fresh basil leaves, sliced
- ½ cup fresh lemon juice (about 2 lemons)
- 2 tablespoons Tuscan Oil
- 2 cloves fresh garlic, chopped
- ¾ cup white wine
- 8 ounces chicken broth
- 2 tablespoons capers
- 8 ounces fresh mushrooms, sliced
- 8 ounces heavy cream
- Salt and pepper to taste
- Optional: 8 ounces fresh asparagus, trimmed
Instructions:
- Heat Lesley Elizabeth Tuscan Oil in a nonstick skillet over medium heat.
- Season chicken tenders with salt and pepper. Sear each side for about 2 minutes until lightly browned.
- Add chopped garlic and sauté for 1 minute until fragrant.
- Pour in lemon juice and white wine. Simmer until liquid reduces by half.
- Add chicken broth and simmer again until reduced.
- Stir in mushrooms and capers. Cook until mushrooms are tender and heated through.
- Add heavy cream and stir to combine. Cook for 1–2 minutes.
- Stir in fresh basil and cook for 1 additional minute.
- Optional: Add fresh asparagus and cook until tender-crisp.
