Using Lesley Elizabeth’s Wicked Good Pepper and Shallots, Scallions & Leeks Seasoning, this dish is elevated with a bold peppery bite and delicate aromatics, finished with a drizzle of rich raspberry balsamic glaze and fresh raspberries for a gourmet touch. Ideal for weeknight dinners or special occasions alike.

Ingredients:

  • 4 center cut pork chops (¾ inch thick, about 2 lbs total)
  • 1 teaspoon salt
  • 1 teaspoon Wicked Good Pepper
  • 1 tablespoon olive oil
  • 2 tablespoons Shallots, Scallions & Leeks Seasoning
  • ⅔ cup raspberry balsamic dressing (or glaze)
  • 1½ teaspoons sugar
  • ¼ cup fresh raspberries

Instructions:

1. Season the Pork:

Pat pork chops dry. Season both sides with salt and Wicked Good Pepper.

2. Sear the Chops:

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add pork chops in two batches along with Shallots, Scallions & Leeks Seasoning. Sear each side until golden brown, about 5 minutes. Remove pork and set aside on a plate.

3. Make the Glaze:

To the same skillet, add raspberry balsamic dressing and sugar. Stir until sugar dissolves and glaze begins to thicken slightly, about 1 minute.

4. Glaze the Pork:

Lower heat. Return pork to the skillet along with any juices. Turn pork to coat in the glaze. Cook 3 minutes more, turning occasionally until fully cooked through.

5. Finish & Serve:

Transfer pork to a platter. Boil the remaining glaze for 2 minutes until syrupy. Add fresh raspberries just before serving and stir gently. Spoon sauce over pork and serve hot.
