Serves: 12–14 muffins
Prep Time: 20 minutes
Cook Time: 15–20 minutes
Ingredients:
Topping: ¼ cup Lesley Elizabeth Blueberry Honey Sugar 1½ teaspoons grated lemon zest
Muffins: 2 cups fresh blueberries, picked over and divided 1⅛ cups + 1 teaspoon Lesley Elizabeth Blueberry Honey Sugar 2½ cups all-purpose flour 2½ teaspoons baking powder 1 teaspoon salt 2 large eggs 4 tablespoons unsalted butter, melted & cooled slightly ¼ cup vegetable oil 1 cup buttermilk 1½ teaspoons vanilla extract
Instructions:
Heat the Oven: Preheat to 425°F. Spray a standard muffin tin with vegetable oil spray or line with paper liners and spray lightly.
Make the Citrus Topping: Stir ¼ cup Lesley Elizabeth Blueberry Honey Sugar and the grated lemon zest together in a small bowl until combined; set aside.
Make the Berry Swirl: Bring 1 cup of the blueberries and 1 teaspoon of Lesley Elizabeth Blueberry Honey Sugar to a simmer in a small saucepan over medium heat. Cook, mashing the berries with a spoon several times and stirring frequently, until the berries have broken down and thickened (about 6 minutes). Transfer to a small bowl and cool to room temperature (10–15 minutes).
Whisk Dry Ingredients: Whisk the flour, baking powder, and salt together in a large bowl.
Mix Wet Ingredients: Whisk the remaining 1⅛ cups Blueberry Honey Sugar and eggs together in a medium bowl until thick. Slowly whisk in the melted butter and oil until combined, then whisk in the buttermilk and vanilla until smooth.
Combine Batter: Using a rubber spatula, fold the egg mixture and the remaining 1 cup of fresh blueberries into the flour mixture until just moistened. The batter will be very lumpy with a few spots of dry flour—do not overmix.
Layer, Swirl & Top: Fill muffin cups half-full with batter and top each with about a teaspoon of the cooked berry mixture; swirl gently with a toothpick. Divide the remaining batter evenly over the top to fill and slightly mound the cups. Top with the remaining cooked berry sauce and swirl gently using a figure-eight motion. Sprinkle the lemon-sugar topping evenly over each muffin.
Bake & Cool: Bake for 17 to 18 minutes, rotating the tin halfway through, until the tops are golden and just firm. Cool in the tin for 5 minutes, then transfer to a wire rack to cool for 5 more minutes before serving.
Why Use Lesley Elizabeth Blueberry Honey Sugar?
