Baked Tomato Pasta with Basil Garlic Oil & Wicked Good Pepper

This vibrant, easy-to-make pasta features roasted plum tomatoes enhanced with aromatic basil, bold Basil Garlic infused oil, and our spicy Wicked Good Pepper seasoning. Perfect for summer or any time of year, it’s a celebration of simple ingredients packed with gourmet flavor.

Ingredients:

  • 2½ pounds plum tomatoes
  • ¾ cup Lesley Elizabeth Basil Garlic Oil
  • 1 tablespoon Wicked Good Pepper
  • 2 tablespoons fresh basil, chopped
  • 1 pound thin pasta (spaghetti, angel hair, or capellini)
  • Salt & pepper to taste
  • Fresh Asiago cheese, grated

Instructions:

1. Roast the Tomatoes:

Preheat oven to 425ºF. Core the plum tomatoes and slice them width-wise into ¼-inch rounds. Arrange slices in a single layer on a baking sheet.

Sprinkle generously with Wicked Good Pepper. Drizzle with Basil Garlic Oil and top with chopped basil. Roast for about 25 minutes or until tender and edges are slightly browned and caramelized.

2. Cook the Pasta:

While tomatoes are roasting, cook pasta in salted boiling water until al dente. Reserve about ½ cup of pasta cooking water before draining.

3. Combine & Finish:

In a large bowl, toss the cooked pasta with the roasted tomatoes, remaining Basil Garlic Oil from the baking pan, and a splash of reserved pasta water to bring it all together.

Season with additional salt and pepper to taste, then top with freshly grated Asiago cheese for a nutty, savory finish.
