Baked Shrimp with Pesto

- 1 pound medium to large shrimp, peeled and deveined
- 2 tablespoons butter
- ¼ teaspoon salt
- ½ cup dried breadcrumbs
- 6 tablespoons Parmesan cheese, separated
- 8 tablespoons Lesley Elizabeth Sundried Tomato Pesto & Seasoning
- ⅓ cup Extra Virgin Olive Oil (EVOO)
- ½ cup water
Instructions:
- Prepare the Sundried Tomato Pesto according to package directions using EVOO and water. Set aside.
- In a skillet, melt butter over medium heat. Add shrimp and sauté until just opaque and pink—about 3 minutes. Lightly season with salt.
