Baked Salmon Loaf with Lemony Dill Seasoning

Baked Salmon Loaf Recipe

Ingredients:

  • 10 ounces canned salmon, skinned and boned
  • 1 cup cooked brown rice
  • 1 egg, beaten
  • ¼ cup milk
  • ¼ cup mayonnaise
  • 1 tablespoon fresh parsley, chopped
  • 1½ teaspoons Lesley Elizabeth Lemony Dill Seasoning
  • 1 tablespoon Shallots, Scallions & Leeks Seasoning
  • ⅛ teaspoon ground black pepper
  • 1 ounce grated cheddar cheese

Instructions:

  1. Preheat oven to 375°F.
  2. In a medium mixing bowl, combine all ingredients except the cheddar cheese. Stir until well mixed.
  3. Spray a medium loaf pan with non-stick cooking spray. Spoon in the salmon mixture, pressing it down evenly with the back of a spoon.
  4. Bake for about 50 minutes, or until firm and golden brown.
  5. Sprinkle grated cheddar cheese on top and bake for an additional 10 minutes until the cheese is melted and bubbly.
  6. Serve warm, or refrigerate and enjoy chilled later. Perfect with a side salad or crusty bread!
