Avocado Fruit Salad with Mango Tangerine Sugar

This refreshing avocado fruit salad is a burst of summer flavor, made even more delicious with Lesley Elizabeth's Mango Tangerine Sugar in the vinaigrette!

AVOCADO FRUIT SALAD

Featuring Mango Tangerine Sugar

Serves 8

Dressing Ingredients:

  • 4 ounces Lesley Elizabeth Extra Virgin Olive Oil (EVOO)
  • 3 tablespoons cider vinegar
  • 4 tablespoons Mango Tangerine Sugar
  • ½ teaspoon salt

Salad Ingredients:

  • 2 medium avocados, peeled, pitted & sliced
  • 2 pounds salad greens, torn
  • 2 medium oranges, peeled & sectioned
  • 1 large red grapefruit, peeled & sectioned
  • 1 medium pear, sliced
  • ½ pound green seedless grapes

Instructions:

  1. In a small bowl, whisk together EVOO, cider vinegar, Mango Tangerine Sugar, and salt to create a bright, citrusy vinaigrette.
  2. Place sliced avocado in a bowl and drizzle with 2 tablespoons of the dressing. Set aside to soak in the sweet, tangy flavor.
  3. In a large serving bowl, gently combine salad greens, orange segments, grapefruit slices, pear, and grapes. Toss lightly.
  4. Divide the salad onto 8 plates. Top with avocado slices and a final drizzle of the Mango Tangerine vinaigrette. Serve immediately.
