Asparagus with Balsamic Tomatoes & Aged Balsamic Vinegar

Ingredients:
- 1 pound asparagus, trimmed
- 2 teaspoons Extra Virgin Olive Oil (EVOO)
- 1½ cups halved grape tomatoes
- 2 tablespoons Aged Balsamic Vinegar
- ¼ teaspoon salt
- ½ teaspoon fresh ground black pepper
Instructions:
- Cook asparagus in boiling water for 2 minutes or until crisp-tender. Drain well.
- Heat EVOO in a large skillet over medium-high heat. Add tomatoes and garlic; cook 5 minutes, stirring occasionally.
- Stir in Aged Balsamic Vinegar and cook an additional 3 minutes. Add salt to taste.
- Arrange asparagus on a serving platter, top with tomato mixture, and sprinkle with fresh ground black pepper.
