Artichoke Tortino with Ultimate Garlic Oil
Makes: 4 servings
Ingredients:
- 1 (12.75 oz) can artichokes packed in water or light brine
- ¼ cup Ultimate Garlic Oil
- ½ tsp Wicked Good Pepper
- 8 large eggs
- ½ cup grated Romano-Parmesan cheese
- Sea salt, to taste
Instructions:
- Drain and rinse the artichokes well, then pat them dry with paper towels.
- In a 9 or 10-inch oven-safe skillet over medium heat, warm the Ultimate Garlic Oil for about 1 minute.
- Add the artichokes and sprinkle with Wicked Good Pepper. Cover and cook, stirring occasionally, until the artichokes begin to brown slightly.
- Preheat your oven’s broiler.
- In a mixing bowl, whisk the eggs until blended. Add the cheese and sea salt to taste; whisk again to combine.
- Spread the artichokes evenly across the pan and slowly pour the egg mixture over them, trying not to displace them.
- Reduce heat to medium-low and cook uncovered for 1–2 minutes until the eggs start to set.
- Use a spatula to gently lift the edges, allowing uncooked egg to flow underneath. Continue to cook until the bottom is set and the center is still moist (about 3 minutes).
- Transfer the pan to the broiler, about 4 inches from the heat source, and broil for 1–2 minutes or until the top is set and lightly browned. Watch carefully to avoid overbrowning.
- Slide the finished tortino onto a plate, cut into wedges, and serve warm.
