Artichoke & Lemon Bow Tie Pasta with Garlic Seasoning

Artichoke & Lemon Bow Tie Pasta with Oh! So Garlic! Seasoning

Ingredients:

  • 2½ teaspoons salt, divided
  • ½ pound fresh asparagus, trimmed and cut into 1½-inch pieces
  • 4 cups uncooked bow tie pasta
  • 3 tablespoons extra virgin olive oil
  • 14 ounces water-packed quartered artichoke hearts, well drained
  • 3 tablespoons Oh! So Garlic! Seasoning
  • 5 tablespoons water
  • 1 cup crumbled goat cheese
  • 1 tablespoon grated lemon peel
  • 3 tablespoons fresh lemon juice
  • ⅓ cup grated Parmesan cheese

Instructions:

1. Hydrate the Garlic Seasoning:

In a small bowl, combine Oh! So Garlic! Seasoning and 5 tablespoons of water. Let stand to rehydrate while prepping other ingredients.

2. Blanch the Asparagus:

Bring a 6-quart pot of water to a boil with 2 teaspoons of salt. Add asparagus and cook for 1–2 minutes until just crisp-tender. Immediately transfer to an ice water bath, then drain and pat dry.

3. Cook the Pasta:

In the same pot, cook bow tie pasta until al dente. Drain, reserving 1 cup of pasta water.

4. Sauté the Artichokes:

In a large skillet, heat 1 tablespoon extra virgin olive oil over medium-high. Add artichoke hearts and sauté 3–4 minutes until lightly browned. Add the rehydrated Oh! So Garlic! Seasoning and stir for 1 minute.

5. Combine & Finish:

Add the cooked pasta to the skillet. Stir in asparagus, goat cheese, lemon peel, lemon juice, the remaining salt and olive oil. Toss to combine, adding pasta water as needed to create a light, creamy sauce.

6. Serve:

Plate pasta and sprinkle with grated Parmesan cheese. Serve warm or at room temperature for a refreshing, zesty meal!
