Ingredients:
- ½ cup dry cannellini beans
- 15 ounces chicken broth
- 8 tablespoons Extra Virgin Olive Oil (EVOO), divided
- 2 pounds Brussels sprouts, trimmed and halved lengthwise
- 2 tablespoons Oh! so Garlic! Seasoning
- 1 cup coarsely grated Parmesan cheese (about 2 ounces)
- Salt & pepper to taste
Instructions:
- Cook cannellini beans in chicken broth according to package directions until tender.
- Heat 3 tablespoons EVOO in a large skillet over medium-high heat. Add half the Brussels sprouts and cook, stirring occasionally, until browned, about 5 minutes. Transfer to a large bowl.
- Add 3 more tablespoons EVOO to the skillet and cook the remaining Brussels sprouts until browned. Transfer to the bowl.
- Add remaining EVOO and Oh! so Garlic! Seasoning to the skillet. Return Brussels sprouts to the pan and sauté until crisp and tender, about 3 minutes.
- Add the cooked cannellini beans with broth and cook until warmed through. Stir in grated Parmesan cheese, season with salt and pepper, and serve hot.
Note: Any type of dry bean can be used in this versatile and flavorful recipe!
