Almond Crusted Chicken Breasts with Strawberry Balsamic Sauce
Serves 4

Ingredients:
- 4 boneless, skinless chicken breast halves
- Salt & pepper to taste
- ⅔ cup finely chopped unbleached almonds
- ¼ cup chopped green onions
- ⅓ cup chicken broth
- ⅓ cup strawberry preserves
- 3 tablespoons Lesley Elizabeth Strawberry Balsamic Vinegar
- 10 ounces fresh baby spinach (raw or lightly sautéed)
- 1 tablespoon Lesley Elizabeth Extra Virgin Olive Oil
- Cooking spray for skillet
Instructions:
- Coat a large non-stick skillet with cooking spray and heat Extra Virgin Olive Oil over medium-high heat.
- Season chicken breasts with salt and pepper, then dredge in chopped almonds, pressing gently to coat both sides.
- Sauté the chicken in the skillet, turning once, until golden brown and fully cooked. Remove chicken from pan and keep warm.
- Lower heat to medium-low, then add green onions. Sauté for 1 minute.
- Add chicken broth, strawberry preserves, and Strawberry Balsamic Vinegar. Stir and simmer until the sauce is thickened, about 2–3 minutes.
- Arrange fresh or cooked baby spinach on a serving platter. Place chicken on top and drizzle with the warm strawberry balsamic sauce.
