Ingredients:

  • 8 medium zucchini
  • 2 tablespoons Extra Virgin Olive Oil (EVOO)
  • 2 large yellow onions, halved and sliced ½ inch thick
  • 1 teaspoon No Salt Seasoning, divided
  • ½ teaspoon fresh ground black pepper, divided
  • ½ cup grated Parmesan cheese

Instructions:

  1. Trim ends off zucchini and cut each in half lengthwise. Slice diagonally into ½ inch pieces.
  2. Heat 2 tablespoons EVOO in a large 12-inch sauté pan over medium-low heat. Add sliced onions and cook for 10 minutes until they begin to brown.
  3. Add half the zucchini to the pan with ½ teaspoon No Salt Seasoning and ¼ teaspoon black pepper. Toss occasionally and cook for 10 to 15 minutes until zucchini is just tender.
  4. Sprinkle Parmesan cheese over zucchini and cook for an additional 30 seconds.
  5. Transfer to a serving platter and repeat the cooking process with the remaining zucchini and seasonings.
  6. Serve immediately for a delicious, healthy vegetable side dish.
