ZUCCHINI BRUSCHETTA Garlic & Green Herb Oil
Serves 4 375˚F
4 small zucchini
3 plum tomatoes, sliced
4 ounces mozzarella or Parmesan Cheese, shredded
Garlic & Green Herb Oil
Salt & pepper to taste
1. Slice the zucchini in half and slice off the bottom to stable, place on a baking sheet lined with parchment paper.
2. Shake the bottle of Garlic & Green Herb Oil vigorously and pour about a ¼ cup into a small dish. Brush the zucchini with the oil making sure to get plenty of the delicious herbs.
3. Top with sliced tomatoes, salt and pepper to taste. Evenly top with cheese and bake for 20 to 30 minutes until tender and cheese is slightly browned.
